I have perfected the "lazy omlette"-- sauteed some mushrooms in butter, pour in 2 eggs whisked with a tablespoon or so of milk, turn heat to low, sprinkle top with green onions and grated romano, once it is almost cooked through pop it under the broiler for 1 minute. Voila! No flipping.
